AUM alum Little serves up Southern dishes on the TODAY show

SouthernBiteCover_wnAUM alumnus Stacey Little dished up Southern cuisine on the Today Show on Sunday, March 30, as one of seven chefs chosen for Fresh Cooks Live week on the national morning show. Featured on the finale of the week-long series spotlighting “chefs you should know,” Little served up a Sunday brunch menu, complete with a gospel choir performance. The menu included shrimp and grits, fresh fruit salad, and ham and cheese quiche. Get the recipes at

Little earned a bachelor’s degree in communication from AUM in 2004 and is the author of the popular new cookbook Southern Bite. He took Advanced Expository Writing with Associate Professor of English Nancy G. Anderson, with whom he still keeps in touch.

“He was a great student to have in class - a good writer who participated in class enthusiastically,” Anderson said. “More important to me was Stacey's leadership, along with his colleagues in the AUM chapter of PRCA, who took over publicity for the Make-a-Difference project sponsored by Actions Build Community. I am convinced that their involvement is what led to the recognition of Reading Makes a Life-long Difference as one of the top 10 initiatives in the nation that year.
